INGREDIENTS (Serves 1-2)
 
2 slices if sourdough bread
Olio Bello Chilli & Garlic Infused Olive Oil
30ml Olio Bello Leccino Extra Virgin Olive Oil
1/2 onion, diced
2 Roma tomatoes, diced
Few basil leaves, torn
Salt and pepper
5 Kalamata olives, pitted and sliced
Parmesan cheese slices, for garnish
Extra basil leaves, for garnish
 
METHOD 

  • Heat grill to medium-high heat. Brush each slice of bread with Olio Bello Chilli & Garlic Infused Olive Oil grill until golden.
  • In a pan, warm the Leccino Olive Oil and lightly cook onion, tomato, basil and olives until warm.
  • Season with salt and pepper. Spoon the mixture evenly onto each slice of toast. Garnish with parmesan cheese, a few basil leaves and a drizzle of Leccino Olive Oil.
