Spaghetti all'Aglio with Olio Bello "Liquid Gold"
Serves 4
Ingredients
- 400g spaghetti (or tagliolini)
- 4 to 6 cloves garlic, finely sliced
- 100ml Olio Bello extra virgin olive oil (for cooking and infusing)
- 2 to 3 tablespoons Olio Bello Olio Nuovo "Liquid Gold" (to finish)
- 1 small dried chilli, finely sliced (optional)
- Sea salt, for pasta water
- Fresh Italian parsley, finely chopped
- Reserved pasta water
Method
- Bring a large pot of water to the boil, season generously with sea salt, and cook the pasta until al dente. Reserve a cup of pasta water before draining.
- While the pasta cooks, gently warm the Olio Bello extra virgin olive oil in a large pan over low heat. Add the sliced garlic and chilli and slowly infuse until softened. Avoid browning the garlic, as it will become bitter.
- Add a splash of reserved pasta water to the pan and stir to create a silky emulsion.
- Add the drained pasta and toss well, allowing the sauce to turn creamy.
- Add more pasta water as needed until glossy.
- Remove from heat and finish with a generous drizzle of Olio Bello Olio Nuovo "Liquid Gold". Garnish with fresh Italian parsley and serve immediately.
Secret Chef Tip: Scatter toasted breadcrumbs over the top for extra crunch.

"This dish is all about simplicity. A basic dish with a lot of flavour. Because the oil is raw and unfiltered, the true expression of our Olio Nuovo 'Liquid Gold' is best enjoyed fresh and uncooked. I recommend drizzling it generously over the pasta at the end to capture the vibrant aroma and peppery finish of the new oil. Of course, it's best enjoyed with a glass of local Margaret River red, with family and friends around the table."
