Oil Maker's Notes 2026

Italian Tradition. Margaret River Style.
Bold, Robust & 'Packing a Punch'.

We are proud to present our 2026/27 Olive Oil Collection and Oil Maker's Notes for the season, and thank everyone for their continued support of Olio Bello and the WA Olive Oil Industry.

2026 has been another solid and successful year on the farm, producing high-quality, flavoursome oils in true Italian tradition, shaped by our Margaret River terroir and dedicated farming practices.

With such a diverse and visionary range of cultivars across our 14 unique groves, we have the opportunity to select and blend each harvest with care. This year is no exception. Our 2026 oils have certainly 'packed a robust punch', delivering greater fruit intensity, flavour complexity and pungency.

This was reflected at the recent WA Olive Oil Awards in Perth, with Gold for Leccino, Silver for Arbequina and Bronze for Romanza.

Congratulations also to our local growers whose olives we press, many of whom were recognised with medals at the recent WA Olive Oil Awards.

Finally, I would like to personally thank our dedicated picking and production team and everyone involved in this year's harvest. Congratulations also to our local growers and the wider WA olive oil industry for continuing to produce exceptional Western Australian olive oils for all to enjoy.

We hope you enjoy the collection, and thank you for your ongoing support.

Snapshot of Season

The year's solid fruit yield reflected near-perfect Mediterranean growing conditions: good winter rains in 2025, a mild spring, and an extended, dry summer (free from extreme heat). A consistently dry autumn also worked in our favour, triggering early fruit ripening, back in April.

These idyllic conditions produced exceptional fruit parcels, setting the stage for high-quality oils with increased polyphenol levels and complex flavour profiles across the range.

Whilst not a major bumper year in terms of volume, the harvest was abundant enough to deliver some outstanding fruit and outstanding oils for the season.

We anticipated this quality earlier in the season when sampling our Olio Nuovo (Liquid Gold) over winter, and this has carried through into our new range. This is exciting news for our FOOBIE olive oil connoisseurs, both from a health and a culinary perspective.

Olio Nuovo - Liquid Gold

Following an early harvest and pressing season, we released our much anticipated Limited Release 2026 Olio Nuovo (new oil) Liquid Gold in the form of 'Manzanilla', in June. It was a first for the farm to debut this cultivar as Olio Nuovo, and it sold out within days of its release, with only 500 bottles.

Following our winter harvest, all of our new oil (Olio Nuovo) was then carefully stored in our controlled temperature storage facility for around 3 months, to settle and clarify.

Our traditional, Citrus Pressed and Infused oils have then been blended and crafted to create our 2026/27 collection, and we're pleased to present Mandarin and Lime for the 2026 season.

Table Olives

In early April, we also hand-picked our Manzanilla and Kalamata for organic table olives. These are now resting in brine and will be ready to enjoy around April 2027. Our Manzanilla olives were also the hero of our '007' Liquid Gold release in winter, as mentioned.

As per our 2023 harvest, this year has also seen higher polyphenol levels for our Romanza, Frantoio and WA Mission olives. This has resulted in more robust oils, and perhaps even healthier ones, due to the well-researched antioxidant value and benefits associated with higher polyphenol levels.

Every year, these levels are analysed and recorded via East Coast laboratory testing as part of our certified organic accreditation, giving us greater insight and data around the polyphenol levels for each oil.

Local Community

Once again, we were proud to press olives for many local producers across the South West, via our Italian Pieralisi Pressing Mill. We congratulate all local growers on their contribution to the WA olive industry and their award wins, and wish them every success for the year ahead.

In 2026, we pressed more than 200 tonnes of olives for external local growers during the season, producing well over 35,000 litres of olive oil for the region.

Award Wins

We're pleased to announce that the farm won 3 medals at the recent 2026 WA Olive Awards, held in Perth on 8 October. This included Gold for Leccino, Silver for Arbequina and Bronze for Romanza. 81 oils were judged across 35 entrants.

Our Gold Medal winning Leccino was picked back in April. This lower yielding, but lively, herbaceous, fruity and pungent/peppery oil is a standout for the farm in 2026!

Interestingly, the Leccino was the first variety we picked, in a smaller quantity. We actually picked it early in order to beat the parrots (28s) taking it! So, in an ironic twist, it seems that for the first time in Olio Bello's history, the colourful and cheeky parrots have helped (and not hindered) our chances of winning a Gold!

See below for Olio Bello's winning oils and Judge's Comments:

2026 Wins: WA Olive Awards

🥇 Gold - Leccino

Class 2: commercial volume, single grove: 200-4999 litres

Judge's Comments:
"Complex aromas of floral and vanilla notes combine with olive, pea shoot, guava and freshly cut grass. The aromatic character transfers beautifully to the palate, with additional olive flavours and pronounced bitterness and pungency. A robust, full-flavoured oil, with a long, gently persistent finish."

🥈 Silver - Arbequina

Class 2: commercial volume, single grove: 200-4999 litres

Judge's Comments:
"Fresh aromas of vegetables, tomato, herbs and pine are complemented by delicate summer fruit. The flavours transfer well to the palate, revealing green vegetable, salad, tomato, olive and pepper characters. Well balanced and harmonious, with a gently building warmth that lingers through the finish."

🥉 Bronze - Romanza (Frantoio, Bouteillan, WA Mission)

Class 2: commercial volume, single grove: 200-4999 litres

Judge's Comments:
"Herbaceous and earthy aromas lead to a viscous palate with multiple delicate flavours. Bitterness and pungency develop."

Oil Maker's Pick 2026

Romanza

"Lively, Pungent on the Palate, Robust & Bold, Peppery Finish."

Named after the ship that carried our Pieralisi pressing mill from Italy's Marche region to Fremantle more than two decades ago, Romanza was also the name of the very first oil produced and sold at Olio Bello.

This year's Romanza blend celebrates that journey, bringing together Italian tradition and methodology with our own unique blending style. For the first time, we've blended our Bouteillan with WA Mission to create a lively oil: pungent on the palate, with robust flavours and a bold finish.

It's a true signature blend and a standout for the season, with a real 'wow factor'.

The Tuscan Leccino would be my second choice for those looking for a similarly robust 'kick', with a slightly more floral flavour and hints of pepper.

We think this year's collection really packs a robust punch above its weight, and hope you enjoy the range.
