Mandarin & Vanilla Bean Granita Recipe

Ingredients
- 125 ml Olio Bello Mandarin & Vanilla Bean Cordial
- ¼–½ cup water (adjust to taste, depending on how sweet you like it)
- Zest of 1 mandarin, lemon, lime or orange
Method
- Combine the cordial, water and citrus zest in a shallow pan or freezer-safe dish. Stir well.
- Place in the freezer.
- After 2 hours, use two forks to scrape the edges and partially frozen mixture, breaking it up into icy flakes.
- Return to the freezer and repeat the scraping process every 2 hours.
- The granita will take approximately 6–8 hours to fully freeze and form soft, fluffy crystals.
- Once frozen, spoon into chilled glasses.
- Garnish with fresh mint and enjoy.
