Ingredients

  • 125 ml Olio Bello Mandarin & Vanilla Bean Cordial
  • ¼–½ cup water (adjust to taste, depending on how sweet you like it)
  • Zest of 1 mandarin, lemon, lime or orange

Method

  1. Combine the cordial, water and citrus zest in a shallow pan or freezer-safe dish. Stir well.
  2. Place in the freezer.
  3. After 2 hours, use two forks to scrape the edges and partially frozen mixture, breaking it up into icy flakes.
  4. Return to the freezer and repeat the scraping process every 2 hours.
  5. The granita will take approximately 6–8 hours to fully freeze and form soft, fluffy crystals.
  6. Once frozen, spoon into chilled glasses.
  7. Garnish with fresh mint and enjoy.
