White Christmas Rocky Road with Olive Oil

Ingredients
- 500 g white chocolate
- 30 ml extra virgin olive oil
- 200 g marshmallows, chopped
- 20 g (¼ cup) desiccated coconut
- 40 g pistachios
- 40 g dried cranberries
- 110 g raspberry lollies, chopped in half
- 75 g (½ cup) peanuts, almonds, or granita biscuits, chopped
Instructions
- Line the base and sides of a 20 cm × 20 cm square baking tray with baking paper.
- Place the white chocolate and olive oil into a heatproof, microwave-safe bowl. Heat uncovered on 50% power in 30-second intervals, stirring each time with a metal spoon, for 4–5 minutes or until melted. Stir until smooth.
- Add the marshmallows, coconut, pistachios, cranberries, raspberry lollies, and peanuts, almonds, or granita biscuits. Stir until well combined.
- Spread the mixture evenly into the prepared tray and refrigerate for 2 hours, or until completely set.
- Cut into slices using a sharp knife. For cleaner cuts, run the knife under hot water, dry thoroughly, and slice while warm.
