Ingredients (Serves 1-2)

2 slices if sourdough bread
Olio Bello Chilli & Garlic Infused Olive Oil
30ml Olio Bello Leccino Extra Virgin Olive Oil
1/2 onion, diced
2 Roma tomatoes, diced
Few basil leaves, torn
Salt and pepper
5 Kalamata olives, pitted and sliced
Parmesan cheese slices, for garnish
Extra basil leaves, for garnish

  1. Heat grill to medium-high heat. Brush each slice of bread with Olio Bello Chilli & Garlic Infused Olive Oil  grill until golden.
  2. In a pan, warm the Leccino Olive Oil and lightly cook onion, tomato, basil and olives until warm.
  3. Season with salt and pepper. Spoon the mixture evenly onto each slice of toast. Garnish with parmesan cheese, a few basil leaves and a drizzle of Leccino Olive Oil.
