Chocolate & Mandarin Pressed Olive Oil Cake
1 1/2 cups plain flour
1 cup caster sugar
4 tablespoons cocoa
5 tablespoons Olio Bello Mandarin Pressed Olive Oil
1/2 teaspoon salt
2 tablespoons white vinegar
1 teaspoon baking powder
2 teaspoons vanilla essence,
1 teaspoon bi-carb soda
- Sift together dry ingredients in a bowl - make three wells. Into these put the oil the white vinegar and the vanilla essence.
- Pour over 1 cup of lukewarm water and mix well.
- Pour into 8 inch x 8 inch square cake pan.
- Bake at 180C for 30 - 40 minutes.
Try mixing a little Olio Bello Mandarin Oil with light sour cream and a couple of teaspoons of icing sugar for the ultimate taste.
